Egg And Sweet Potato Hash


Today’s recipe is a quick and easy sweet potato hash with eggs


2-3 tbsp of extra virgin olive oil

1 medium red bell pepper, diced

1 medium sweet potato, diced

1 onion, chopped

1 garlic clove, chopped

2 eggs

Pinch of salt

Fresh ground pepper, to taste


  • Heat olive oil in a medium sized saucepan over a medium heat. Add the sweet potatoes and cook for 10 minutes or until the potatoes are almost tender.
  • Next add the red peppers and onions, cover the pan and cook until the onions are translucent (2-4 minutes).
  • Next add the chopped garlic and toss mixture so it is evenly combined.
  • Crack the eggs over the mixture, season with salt and black pepper and cook for another 3-5 minutes or to your liking.
